
Lassi is a very popular drink, both in India and outside India. It is available not only from roadside cafes but is also a
great favourite in good restaurants and hotels. There is no substitute for this drink, especially on a hot day. It is ideal
served with hot dishes as it helps the body digest spicy food.
Serves 6:
Preparation time: 10 minutes
- Natural plain yoghurt – 300 ml
- Sugar – 6 teaspoon or to taste.
- Ice cubes – 3 to 4
- Fresh strawberries – 6
- Crushed pistachio nuts – 2 tablespoon
- Put the yoghurt in a blender and blend for 1 minute or until frothy. Add sugar to taste and continue blending for another
30 seconds.
- Add ice, strawberries and continue to blend for another minute. Taste for sweetness and add more sugar if necessary.
Pour the lassi into serving glasses.
- Garnish with the crushed pistachio nuts and serve chilled.
Variation:
If you prefer a slightly salty drink, add salt instead of sugar. Garnishing can also be changed to other nuts like cashew
nuts, almonds or finely chopped fresh fruit of your choice. If you prefer the drink to be less chilled, substitute the ice
with 2 cups of water.
Tips:
Substitute strawberries with other available seasonal fruits like raspberries, mango, pineapple, mixed berries or any other
fruit of your choice!
