Spicy Chicken Salad:
This dish has evolved out of a need to do something quick, easy,
spicy and tasty. It is not available commercially; hence comes
literally from our kitchen. Hope you like it!
Serves 4-6:
Preparation Time: 20 minutes
- Chicken Breast Fillet, diced - 600 gm
- Turmeric Powder - 1½ teaspoon
- Chillie Powder - 1 teaspoon
- Cumin Powder - 1½ teaspoon
- Vinegar - 2 teaspoon
- Salt - ½ teaspoon or to taste.
- Red Onions, chopped - 2 medium
- Green Chillies, finely chopped - 2
- Coriander, chopped - small bunch.
- Lime - 1
- Cherry Tomatoes - 3 small
- Lettuce Salad, mixed - 200 gm
- Oil - 100 ml
Tips!
For a vegetarian substitute, use
either boiled potato, cauliflower
or paneer (Indian Cottage
Cheese) for an equally mouth
watering dish!
- Cut the chicken breast fillets into medium dices. Add turmeric powder, chillie powder, cumin powder, salt, vinegar and
mix well in a bowl.
- Heat oil in a pan. When oil is well heated, reduce heat to medium. Gently add the chicken pieces - few at a time, allowing
enough space to turn them over.
- Fry them for 2 minutes. Turn them over a few times to ensure all sides are cooked. Take them off the oil when thoroughly
cooked. Keep them on a kitchen roll to absorb excess oil.
- Put the fried chicken in another bowl. Add chopped red onions, coriander, green chillies and mix well.
- Prepare a plate of mixed lettuce salad. Add some tomatoes to it.
- Add the spicy chicken pieces to the salad. Squeeze some lime juice on top. Eat either hot or cold.
Variation: Chicken Roll
Use a Roti or Paratha to make a chicken roll. Put some of the spicy fried chicken on the Roti or Paratha; add some chopped
cucumber, some mixed lettuce salad, some chillie sauce and some lime juice. Roll it up; put some foil at the bottom to hold
the roll. Your Chicken Roll is ready!
