This is another spice mixture readily available at most Asian stores. However, many like to make their own and this is
a basic recipe. I personally like Shan branded packet varieties that come from Pakistan.
Makes - 20 gm:
Preparation time: 10 minutes
- Coriander Powder - 3 tablespoon
- Cumin Powder - 3 tablespoon
- Garlic Powder - 3 tablespoon
- Paprika Powder - 3 tablespoon
- Chillie Powder - 3 teaspoon
- Ginger Powder - 5 teaspoon
- Mango Powder - 5 teaspoon
- Dried Mint - 5 teaspoon
- Red Food Colouring Powder - 1 teaspoon
- Mix all the ingredients together.
- Store in an airtight container and use when necessary.
Variation:
Red food colouring powder can be replaced with 7-8 drops of liquid food colouring. Freshly grated ginger and garlic
paste can also be used instead of the powder variety. However, this can only be added while marinating chicken.
Tips:
To make a complete marinade for 1 Kg Tandoori Chicken, simply add 3 tablespoon of the above mixture along with
250 gms of plain yoghurt, 2 tablespoon of salt and 10 tablespoon of oil- viz. Mustard, Groundnut, Sunflower or any
other of your choice!
